This delicious cold rice salad has the great flavors of brown rice, fresh veggies, and chopped raw almonds.
Catarina has an beautiful garden and grows so many veggies that we had an amazing vegan super salad.
Actually you can add everything you like in this salad. The main ingredient is brown rice and that supposed to be very healthy, low in fat, low in nutrition, lot of energy! Easy, healthy, flexible and pretty.
- 4 cups cooked long-grained brown rice
- 1 middle size carrot
- 1 cucumber (seedless)
- 1 chopped onion
- 1 cup thinly sliced radishes
- Chopped kale maybe 100 gr
- 1 cup chopped leaves, for example, basil, parsley, mint, dille (a mix is also a good idea!)
- Chopped white raw almonds
- 1/3 cup extra virgin olive oil
- 3 tablespoons lemon juice
- 2 tablespoons tahin
- 1 tablespoon white wine vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic salt and pepper
We ate is together with a coconut vegetable curry. Great combination..
