As I said before, this recipe is passed from generation to generation. The original recipe was shaped as a log, or as a salami, but to shape the mixture as cake is even easier.
- 220 grams toasted nuts, chopped into small pieces (walnuts, hazelnuts, almonds whatever you like)
- 180 grams of digestive cookies
- 60 grams dried fruits (raisins, apricots, dates etc)
- 300 gr dark chocolate
- 150 gram butter
-Place the nuts on a baking sheet and bake for about 8 – 10 minutes or until lightly brown
-Meanwhile, break or chop the Digestive Biscuits into small pieces.
-Put the nuts in a large bowl, along with the Digestive Biscuits and dried fruit
-Aubain marie melt the chocolate, butter, and golden syrup.
-Once the chocolate mixture is melted and smooth, stir into the biscuits an nut mixture, until everything is coated with the chocolate. Spread this mixture into the cake shape, cover, and refrigerate for an hour or two, or until set.
Oh and I think Enzo also added some Amaretto 😉
