I met Pura just in a blink of a second. She invited me to her little colourful home in Toledo. She has such a energetic and open presence, she made me smile all the time. We both love food, it made sense we met each other. Picture us eating something like this in her backyard on a warm, sunny, weekend day. Served chilled for the perfect summer appetizer. They second great thing of this dish is, its made in 5 minutes. Not kidding!
- ½ a melon
- 75 gr Greek yogurt
- Salt and pepper
- 2 spoons extra virgin olive oil
- Teaspoon honey
- 1 cayenne without the pits
- 1/4 cucumber, take out the middle part a bit
- Fresh mint
(oh this was for 2 persons, but I ate a lot of it)
Put the melon into a blender along with the yogurt and blend until smooth. Add the olive oil, honey, salt, cayenne, cucumber and blend until well mixed. Garnish with fresh mint and toasted bread.
